Peach season is here! This toast is one of my all time favourite ways to enjoy a juicy ripe peach. The combination of the creamy ricotta against the sweet fresh peaches is simply delicious. Coupled with the aromatic basil and sweet honey these toasts make a wonderful summer breakfast.
2 slices sourdough bread
2 tbsp organic ricotta cheese
1 ripe fresh peach, stone removes and sliced
A few torn fresh basil leaves
1 tsp chia seeds
Toast the bread, spread the ricotta over the toast. Arrange the sliced peaches on top. Sprinkle the basil leaves and chia seeds on top. Finish with a good drizzle of organic local honey.
