Pomegranate salad dressing recipe

Salad season is well and truly here. Instead of buying a ready made dressing from the shops why not make your own healthful dressing at home. This pomegranate dressing is perfect for the abundance of fresh leafy greens and salad leaves at this time of the year. 

Pomegranates are a powerhouse of inflammation fighting antioxidants and vitamin C. This zingy yet sweet dressing will make even the most ordinary green leaves come alive this summer.

 



INGREDIENTS

Seeds and juice of ½ pomegranate
1 tsp organic honey
2 tbsp apple cider vinegar
4 tbsp extra-virgin olive oil
1 tsp wholegrain mustard
Pinch sea salt
Black pepper
¼ cup chopped fresh chives

 



METHOD

Combine all the ingredients in a sterilized glass container and shake well.  Any remaining dressing can be stored in the fridge for up to 5 days.

Optional glass of something cold and delicious to be served on the side.
