Baking is a weekly occurrence in my home. Creating a weekly after school snack for all to enjoy. These super cute gingerbread men are packed full of warming and delicious spices including a few hidden anti-inflammatory ingredients. There is turmeric and black pepper in the mix!

Did you know that a little black pepper helps the absorption of curcumin in turmeric?

These dairy free and gluten free cuties are so very yummy enjoyed with a cup of warm hazelnut milk.

 



INGREDIENTS

2 tbsp mixed spice
2 tbsp ground cinnamon
¼ tsp ground turmeric
1 tsp ground nutmeg
2 tbsp ginger
A little black pepper
Pinch of salt
180g buckwheat flour
¼ tsp bicarbonate of soda
50g coconut oil melted and slightly cooled
20ml hazelnut milk
70g honey

 





METHOD

1. Preheat the oven to 190c. Line a baking tray with baking paper.  Sieve the flour and the dry ingredients into a large bowl. Add the coconut oil, milk and honey to the dry ingredients. Mix to form a dough. Allow to chill in the fridge for 30 minutes.

2. On a flour dusted surface, roll out the dough with a rolling pin to a 1/4 -inch thickness. Use a gingerbread man cutter to make your men. Place on the baking tray. Cook for 12 minutes or until golden brown. Remove and allow to cool.
